cruises- all inclusive or ala carte?

Trying to sell a group on a river cruise in Bordeaux.  This week-long cruise includes EVERYTHING.  Excursions, meals, gratuities, airport transfers, and all drinks.  I'm getting resistance because of the overall cost of the program.  Dine out at a nice restaurant in Bordeaux, and you can easily pay 150 euro.  What's your preference?  Is the convenience worth it?  Can you drink enough aboard ship to justify an all inclusive?  More lines seem to be going this route.
