My guess is there is plenty of home cooking happening around the world at this time so I'm curious what things other Insiders are coming up with for meals they've had at a restaurant before or seen on TV?
Often times Mrs. IAH will find a meal on TV and want to make it the next day. Or, on some of our travels we will find something too good to not make at home and such was the case during a trip to the Tuscany Region of Italy when we stayed at the Luxury Resort Hotel in Tuscany | Renaissance Tuscany Il Ciocco Resort & Spa.
We took a drive from the resort about 10 miles to the little Italian town of Castelnuovo di Garfagana and stumbled upon a deli called L'Aia di Piero - Home.
We grabbed some vino and wandered around the deli for a bit before deciding to get these Tomatoes filled with Farro, a mixture of Egg, Small Salami pieces blended with some type of Spicy Cheese. Dang it was good and not overly filling so we ordered a plate of Farro mixed with fresh Cherry Tomatoes, Mushrooms, Basil and Olive Oil to enjoy finishing up some more vino.
After looking at some photos of trips we ran across this the other day and she was determined to make it as we had just purchased a couple of large Heirloom Tomatoes. Since we could not find any Farro she used the next best thing, Orzo Pasta and combined it with chopped Tomatoes, slices of Zucchini topped with a bit of Parmigiana Cheese. Popped it into the 350 degree oven and let it cook for around 30 minutes.
Although not exactly the same as we had in Italy, it was darn good and will be repeated often.
